Sommelier Notes: We were told about this winemaker from two other great winemakers in the region and we knew why when we were able to taste the wines. The Girard family vineyards are the last vineyards in the Languedoc before the vast grain fields take over up into the Pyrenees mountains.  Parcel "Pech Calvel", sits on a hillside oriented toward the northwest at an altitude of 350 meters, or 1,150 feet.  This elevation and the coolness of the nights is perfect for ‘Continental grapes’ like Pinot Noir.  The grapes for this cuvée are hand-harvested in small flat containers to protect the grapes from crushing so there is no oxidation of the juice before fermentation begins. Pristine juice! The grapes are macerated for 5 to 6 days at low temperatures (8-10°C), the fermentation is done in closed vats and then the wine is aged in 500 liters barrels. The nose expresses ripe cherry and black fruits highlighted with woody notes. In the mouth baked blackberry pie, with medium, rounded tannins.  A very nice ambassador to show the diversity of the region.  Some say pinot noir doesn't belong here in the Languedoc but this wine from grapes grown at high elevation and perfectly made by the Girard family will prove the naysayers wrong!
