Wine Profile
Vineyard Notes
This domaine works in harmony with nature and the environment. Thirty hectares of vineyards are situated between clay-limestone hills and the Bassin de Tau, on the Mediterranean Sea. A stream runs through the vineyard, supporting the biodiversity of the area. Trade winds caress the vines carrying scents of the garrigue and a hint of the sea. The Mediterranean climate allows the grapes to fully mature and express the typicity of the region.
Production Notes
Night-harvesting protects the grapes from oxidation and preserves the aromas and freshness. Each grape variety is fermented separately before blending. Fermentation proceeds at low temperatures. The Viognier (the dominant variety) is matured on the lees.
Winemaker Notes
Yves and Hugues Ricome built their winery in 2004 on land their family has been farming for generations. In 2007, they passed on the winemaking torch to their daughter, Anais Ricome. With 2019 Desir Blanc, Anais proves she is more than capable of upholding the family tradition.
