 A beautiful, bright and exciting wine that is fruity and floral on the nose with just a hint of almond. It is bright and delicate on the palate with refreshing acidity. In the mouth the wine has medium weight with a round, lush texture and a salty, mineral finish.

Serve with lemon and thyme chicken, seabass with fennel, shellfish, and well-matured goat cheese.

Vineyard Notes
Domaine des Schistes is located at the crossroads of the Agly valley terroirs in the towns of Estagel, Tautavel, and Maury. The diversity of soils, altitudes, and micro-climates supports a wide range of wines with distinct personalities. Wines are also influenced by the minerality of local shale massifs and the abundance of Roussillon grape varieties. The domaine cultivates 50 hectares situated between Estagel and Tautavel. The soils are primarily the prized schist, shale.
Production Notes
The grapes are hand harvested in the morning to preserve the fruit and freshness of the grapes. Direct pressing in a long, low-pressure pneumatic press, settling then fermentation at 68-73°F in stainless steel vats. The wine is aged in stainless steel vats, with only one small addition of sulfites right before bottling. Malolactic fermentation is blocked to keep the bright freshness of this spectacular blend of Mediterranean grape varieties.
Winemaker Notes
Family-run Domaine Des Schistes was founded in the early days of the winemaking renaissance in the Languedoc-Roussillon. In 1989, the grandparents and parents of the current young winemaker, Mikael, broke away from the local cooperative winery to start their own adventure. Since then, Domaine Des Schistes has been creating delicious wines from grapes grown and harvested in their own vineyards. Regional tradition is honored as is openness to innovation and organic winemaking. The bold move to independence benefited wine lovers and helped usher in a new era of winemaking — from large production cooperatives to fine, small artisanal wines.
