Vineyard Notes
The vines are farmed organically on alluvial marls from the Roussillon plain.
Production Notes
After five days of pre-fermentation maceration (at 40°F), fermentation begins in stainless steel tanks (between 57°F and 60°F).
Winemaker Notes
Loved by wine critic Jeb Dunnick, this domaine is run by the husband-and-wife team, Séverine and Philippe Bourrier. Séverine came to winemaking through raw passion, rather than family tradition and legacy. She studied oenology and worked in Bordeaux for a decade before becoming one of the finest female winemakers of the Roussillon. Philippe is the wise, earthy agronomist. Together, they restored an old château, revived vineyards and rechristened the estate L’Ou, Catalan for "egg," a reference to the oval-shaped valley surrounding the estate.
