Vineyard Notes
The wines come from sustainable farming, no chemical fertilizers, minimal use of pesticides and no weedkillers.
Production Notes
The Petit Manseng plot, 0.15 hectares ( 0.37 acres) was planted in 2013 on the schist soils in the heart of the Saint Chinian Berlou appellation at 270 meters above the sea level. The plot is facing south in very stony soil which conserves water in dry periods. The planting density is 7100 vines per hectare in order to create competition between the vines and forces the roots to dive deeper into the ground. The Altesse plot is 0.3 hectares ( 0.75 acres), it was planted in 2016 in the town of Capestang on limestone clay soil, not far from the Canal du Midi, 53 meters above sea level. The wine is not fined, but is clear with a pale straw color.
Winemaker Notes
Olivier Pascale comes from generations of winemakers. He and his hard-working wife, Fabienne, tend the vineyards together and then work their magic in the cave where they make their small batch wines. They make their wine in a modest 50 meter square garage, a few vats inside, a small barrel cellar in the dwelling… truly a tiny domaine. In addition to the traditional Languedoc grape varieties: Grenache, Syrah, Mourvèdre and Carignan, in 2009 Olivier planted Counoise, Nielluccio, Sangiovese and Greek Assyrtiko grapes to bring a more Mediterranean influence into his impressive range of wines. We imagine he lies awake at night thinking of the creative "out of the box" names he has given his special wines. “Gabrielle's terrases” is the name of the estate in homage to the winemaker's grandmother's first name and that of their daughter.
