Vineyard Notes
Domaine La Bouysse is located in the village of Saint-André-de-Roquelongue, in the heart of the Corbières Mountains, near the Mediterranean and the famous Fontfroide Abbey. The organic and biodynamic domaine covers 40 hectares, with 80-year-old Carignan vines, 25-year-old Mourvèdre, and 20-year-old Grenache Noir. The vines benefit from the sandstones of the Fontfroide terroir and the clay-limestone soils of the Boutenac terroir.
Production Notes
Direct press, in stainless steel for 5 days at very low temp, 39 degrees F , then fermented in stainless steel at 58 degrees F.
Winemaker Notes
Fourth generation winemakers, Martine Pages and Christophe Molinier, took over Domaine la Bouysse in 1996 after both obtaining degrees in oenology. Martine studied in Alsace and brings finesse In winemaking to all of her cuvées.
