Vineyard Notes
Domaine la Bouysse is located in the heart of the Corbières hills, between the Mediterranean and the Pyrenees and close to the famous Abbaye de Fontfroide. The terroir of Fontfroide is part of an east-west geologic trench along the foothills of the Massif Fontfroide rampart. The estate is completely organic and covers almost 100 acres with mixed vines, olive trees, and garrigue. Domaine la Bouysse began converting to organic in 2010, and thus produces wines labeled “organic since 2013.” Some of the vines are 115 years old, imparting complex, concentrated flavors to the wines. The vines in 2019 Cyprius include: Macabeu (40 years), Grenache Blanc (15 years), and Vermentino (6 years).
Production Notes
The grapes are held in cold stabilization at low temperatures (4°C) for 5 days to preserve fruit aromas. Vinification occurs at controlled temperatures (15-16°C). The final stages of alcoholic fermentation occur in barrels for a month and a half. Aging takes place in oak barrels on fine lees for 3 months.
Winemaker Notes
Fourth generation winemakers, Martine Pages and Christophe Molinier, took over Domaine la Bouysse in 1996 after both obtaining degrees in oenology. Martine studied in Alsace and brings finesse In winemaking to all of her cuvées.
