From an awarding-winning domaine, this organic and biodynamic white awakens the palate with citrus, exotic fruit, and floral notes. A hint of pear peeks through. The tangy attack is balanced with minerality and the finish leaves a fresh mouthfeel.

This crisp, focused cuvée is a dashing companion to grilled and baked fish, such as Sea Bass with Fennel. Also perfect as an aperitif.

Wine Profile
Vineyard Notes
Domaine Modat’s 23 hectares of vines are located in the commune of Cassagnes, in the prized Agly Valley near Perpignan and 200-300m above sea level. The domaine officially converted to organic agriculture in March 2011 and also uses biodynamic practices. Instead of using herbicides, the soil is worked and plowed to encourage the natural processes of breakdown and regeneration. The domaine’s respect for the environment is also reflected in the practice of the “minimal interference” farming method. The soil is mostly white, gray, and red gneiss (granitic sand) over a base of fractured granitic rock, an ideal terroir for elegant wines. The well-drained soil gives the red wines fine, silky tannins, a light structure and great freshness. The terroir is also well-suited for the grape varieties used to make quality dry white wines.
Production Notes
Aging takes place for four months on fine lees with light filtration in neutral French oak barrels. The grapes are manually harvested at dawn when the cool temperatures are best suited for vinification of white wines. Light direct pressing of whole bunches takes place at controlled temperatures with light settling.
Winemaker Notes
Domaine Modat represents a return to winemaker Philippe Modat’s Catalan roots, where his grandfather once owned vineyards. While studying law in Bordeaux, Philippe developed a passion for wine that set him on a journey to founding his own domaine. In 2007, he and his father purchased land and vines in Cassagnes village in the heart of the Roussillon. In September 2008, they built a modern winery using eco-friendly organic materials equipped with thermo-regulated stainless steel tanks and new oak barrels. The estate is now run by his two sons.
Food Pairing Notes
This crisp, focused cuvée is a dashing companion to grilled and baked fish, such as Sea Bass with Fennel. Also perfect as an aperitif.
