Sommelier Notes: The freshness and beautiful soft fruit flavors of this organic wine will definitely get your attention more than the same old same old white wines! There is no oak here because oak isn’t needed when you have fabulous ripe grapes fresh from the vineyard in the hands of a master winemaker. Grey grenache grapes are incredibly rare and blended here with white grenache and Roussanne the wine is stunning! The grapes for this wine come from the vineyards around the domaine, from marl and alluvial soils. After destemming, the grapes are macerated for 5 days at 40° F, then fermented at a very cool temperature between 55-60° F. This gives the wine a wonderful freshness with notes of citrus and white fruit. This great white is a super wine for daily drinking, full of flavor and crispy dry. Standard Issue for your fridge!
Château de l’Ou, is unquestionably one of the rising stars in France’s Roussillon region. Jeb Dunnick loves this estate run by husband and wife team, Séverine and Philippe Bourrier. Séverine, originally from Bordeaux, is the incredibly talented and passionate winemaker. Her husband, Philippe, manages the vineyards. Their vineyards are in the Roussillon just to the south of Perpignan near the Mediterranean coastal plains and they also own parcels high up into the foothills of the Pyrenees Mountains. The entire estate is farmed organically.
