Vineyard Notes
The winemaker practices organic viticulture. The vineyard of Château Borde-Rouge is one of the most picturesque geographies in the region, featuring a natural amphitheater, hundred-year-old pines sculpted by the wind, and a white, rocky ridge shot through with ocher earth tones. Red soils specific to the domaine are rich in iron oxide.
Production Notes
The wines carry the "AB" organic label as only natural methods are used. Cold pre-fermentation preserves the fruit character of the wine. A long maceration of destemmed grapes follows with regular, manual punching down. Aging takes place in barrels for 12 months.

Ageability: Drink now or keep until 2025. The turbulent history of Château Borde Rouge is rooted in the history of the region. The Cathar tragedy, the Roman occupation, the Saracen tornado, and the work of the Benedictines have all shaped Le Château Borde-Rouge. The Legend of Philomena is also part of the rich history, as is the manuscript of the Twelfth century, which tells of the bloody clash between Saracens and Franks in Borderouge. The domaine also produces organic olive oil with an annual production of 20,000 bottles.
