Sommelier Notes: The very fine winemaker, Pascale Rivière’s domaine is situated in the hillsides not far from Montpellier, in the award-winning wine growing region called Montpeyroux. La Jasse Castel has only 30 acres planted with vines, spread around 7 parcels. Each parcel has a different grape variety, varying soils and different orientation to the sun which means lots of interesting blending opportunities for Pascale.
Last year at the worldwide organic wine fair, BioMillisime, Pascale handed us a bottle of wine with a wink and said “Try this”. Wow!! We love this wine! The Grenache is from both 12 year old vines and 50 year old vines grown in well drained, sandy pebbled soil over limestone. After hand harvesting and vinification the wine is aged 15 months in tanks. The Syrah is aged in French oak for 15 months. Then the wine is blended with the addition of a small amount of Carignan. The result is both soft in the mouth and powerful with flavor. Dark fruits, chocolate and even candied orange peel. Rich and delicious! Decant it an hour ahead of time to drink it now or save it up to 15 years to see some real finesse.
