Production Notes
The secret to this incredibly flavorful wine is immediate maceration after harvesting for 48 hours at 39°F. Then vinification and aging of 12 months in stainless steel vats.
Winemaker Notes
Séverine Bourrier came to winemaking through raw passion, not having a family history of winemaking like so many other Languedoc-Roussillon winemakers. She studied oenology in school and worked in Bordeaux for a decade. Together with her husband Philippe, an agronomist, they restored an old château, replanted some new vineyards and rechristened the estate L’Ou, which is Catalan for "egg" as the property is in an oval-shaped valley.
