This exuberant red blend was designed with wine bars, burgers and friends in mind. Notes of tobacco and cured black olives add inviting complexity to the spice and cooked fruit base. A medium body and touch of sweet violets promise to keep the night young.

An excellent choice for your “everyday red,”  enjoy with burgers, pizza, spicy fried chicken, tacos, and Indian takeout.

Vineyard Notes
Domaine de Cabrol’s vineyards grow on clay-limestone hillsides, on the southern slopes of the Black Mountains, with both Mediterranean and Continental weather patterns. The average altitude is 300 meters, providing the vines with a nighttime break from the heat of the day, giving complexity to the flavors of the wines. The calcareous soil is often stony and flecked with the fossils of marine mollusks. The domaine belongs to one of the lesser known Languedoc appellations, Caberdès, and is situated north of Carcassonne. Mediterranean grapes, like Syrah and Grenache, are well-adapted to the region as are Continental grapes, such as Cabernet and Merlot given the influence of the Continental climate coming from the direction of Toulouse. Thus, the vineyards lie at a crossroads of the east and west winds and so are influenced by both the Atlantic and the Mediterranean weather patterns giving the wines a special character.
Production Notes
Manual harvest is followed by fermentation in stainless steel tanks. Oak is not used for this wine. The two grape varieties are fermented separately.
Winemaker Notes
Domaine de Cabrol is owned by Claude Carayol, who took over in 1989. Claude is known throughout the region as an exceptional winemaker who chose well when he began winemaking in the vineyards blending east and west winds of the high Languedoc region.
Food Pairing Notes
An excellent choice for your “everyday red,” enjoy with burgers, pizza, spicy fried chicken, tacos, and Indian takeout.
Harvest is done partly by hand, some by machine depending on the wine they want to make. Parcel by parcel will end up in another tank in the cellar, where soft extraction of color from the skins take place.
