Vineyard Notes
One of the lesser known appellations in the Languedoc is situated north of Carcassonne and is called the Caberdès. The climate is different here, although they grow Mediterranean grapes like Syrah and Grenache, more Continental grapes like Cabernet and Merlot grow very well here too! The vineyard is where the east and west winds cross, bringing both Atlantic and Mediterranean influences. The Mediterranean warmth is necessary for southern grape varieties (like Syrah and Grenache) and the Atlantic humidity is necessary for oceanic grape varieties (Merlot, Cabernet Sauvignon). Clay-limestone hillsides on the southern slopes of the Black Mountain, at an average altitude of 300 meters, the altitude which allows for a nighttime break from the daytime heat. Soil is calcareous and often stony and filled with the fossils of marine mollusks.
Winemaker Notes
Claude and Nicolas Carayol have run Domaine de Cabrol since 1989. The winery has a total surface of 120 hectars, but only 21 of them are planted with vines. The rest is forest and garrigue. Interesting terroir!

Production
Harvest is done partly by hand, some by machine depending on the wine they want to make. Parcel by parcel will end up in another tank in the cellar, where soft extraction of color from the skins take place.
