The vineyards are just to the south of Perpignan near the Mediterranean coastal plains and they have fabulous schiste vineyards high up in the mountains of the Agly Valley above 1,000 feet elevation. The entire terroir is farmed organically.
The handpicked grapes go directly into oak barrels. After 3-4 weeks every barrel is emptied and cleaned, the must is pressed, and the juice goes back into the same barrels to finish fermentation and aging.
Wine critic Jeb Dunnick loves this estate run by husband and wife team, Séverine and Philippe Bourrier. Séverine is the talented and passionate winemaker. Together with her husband Philippe, an agronomist, they restored an old château, replanted some vineyards and rechristened the estate L’Ou, which is Catalan for "egg" as the property is in an oval-shaped valley.
