Sommelier note: One of the less know appellations in the Languedoc is situated north of Carcassonne and is called the Caberdès. The climate is different here and we grow not only Mediterranean grapes like Syrah and Grenache, but more Continental grapes like Cabernet and Merlot grow very well here too! The Caberdès feels like a playground for winemakers! Planting all these varieties and making exciting wines from these feels like a very fun and engaging job. Creating a “painting” from a palette of these colors, the owner and winemaker, Claude Carayol, must feel like an artist. Claude has run the winery since 1989. Domaine de Cabrol has a total surface of 120 ha. (300 acres) but only 21 ha. are planted with vines.  The rest is forest and garrigue, wild herbs like rosemary, thyme and fennel. Interesting terroir! Harvest is done partly by hand, some by machine depending on the wine they want to make. Each parcel will end up in a separate tank in the cellar.

This white wine is created with five different grape varieties: Chenin Blanc, Grenache Blanc, Gros Manseng, Viognier and Sémillon.  Wow!  Quite a cast.

The marriage of all these grapes makes a delicious and unique white wine which speaks to you in the glass: nice citrus fruits, some tropical, fresh mango, and with a zesty slightly herbal touch. In the mouth round and a very long finish. I would serve this wine with fatty fish like Turbot or even salmon, use plenty of lemon and herbs in your cream sauce!
