One of the less know appellations in the Languedoc is situated north of Carcassonne and is called the Caberdès. The climate is different here, and although we grow Mediterranean grapes like Syrah and Grenache, more Continental grapes like Cabernet and Merlot grow very well here too! The domaine is situated right on the edge of two climactic regions so they have many choices. Domaine de Cabrol has a total surface of 120 ha. (300 acres) but only 21 ha. are planted with vines. The rest is forest and garrigue (wild thyme, rosemary, fennel...). Interesting terroir! Claude and Nicolas Carayol have run the winery since 1989. Harvest is done partly by hand, and some by machine depending on the style of wine they want to make. Parcel by parcel the grapes will end up in separate tanks in the cellar, where soft extraction of color from the skins take place. The Syrah is fermented as a whole bunch giving beautiful, soft tannins to the wine! Some of the wine is matured in oak barrels.
La Dérive (literally Off Track) is one serious wine here in their range! The blend is almost ‘New World’ you would expect such a blend for example in South Australia. Intense and deep color, complex nose with dark red fruit, spices and ‘garrigue’. In the mouth complex, smokey and spicy with grippy tannins. This is a ‘comfort’ wine which you will enjoy gorgeous sip by sip! Best to open one hour in advance, this wine needs air. Enjoy with boar, game and hard cheeses.
