All of the wines we carry at Princess and Bear have small case productions and as each vintage varies from year to year, we want to offer tasting notes and technical information on past vintages we've carried for reference.

These wines are made by the most passionate winemakers and have a finesse and complexity that will keep you coming back for more. Many of the winemakers are contrarian and make wines in their own passionate way regardless of tradition or requirements to be an AOC wine.
Our many organic selections are presented below with the European Union organic leaf designation. Organic wines in the EU can use small amounts of organic sulphur, which helps make the wines remain stable over time.
AOP Languedoc
90% Roussanne, 10% Viognier
A complex wine with aromas of citrus flower, grapefruit and mandarin. Some of the wine has spent time in old oak barrels giving it underlying creamy toasty notes. On the rich and mouth-filling palate are hints of citrus fruits, spice and hazelnuts with fresh acidity and a dry finish.

AOP Saint Chinian
70% Syrah, 30% Mourvèdre
Syrah and Mourvèdre blend beautifually together to create an intense, decadent nose of black pepper and licorice mingled with cassis and blueberry in this fine organic and biodynamic red. In the mouth, rich complexity of baked fruits, tobacco and cedar flows into a long and smooth unforgettable finish. Les Crès has been praised by well-known British wine critic Andrew Jefford.
AOP Saint Chinian Berlou
30% Grenache Noir, 30% Syrah, 20% Carignan, 20% Mourvèdre
This is a traditional Languedoc blend of Grenache, Syrah, Carignan and Mourvèdre. The stars surely aligned in the resulting bright and spicy, cooked-berry blend, with a silky tannin feel as the weight of it slides across your mouth and cheeks to a gorgeous finish with some woody and mild tanned-leather tones.

AOP Minervois
40% Grenache Blanc, 40% Marsanne, 10% Vermentino, 10% Viognier
A fresh and somewhat exotic wine due to the blend and organic vineyards on deep soils of silt and sediment from the Aude River. A fresh, lively and clear white wine with aromas of lemongrass and peach. The Grenache blanc and Vermentino give lovely freshness to the wine and the Viognier brings warming exotic aromas. Serve well chilled.

AOP Coteaux du Languedoc
50% Grenache Noir, 30% Carignan, 20% Syrah
A blend of Grenache Noir, Carignan, and Syrah, this crowd favorite was awarded 91/100 by Wine Spectator, is a Feminalise Gold Medalist and a favorite of British wine scholar Jancis Robinson. This juicy organic red expresses rich fruit depth, brilliant acidity and remarkable freshness.

AOP Saint Chinian
30% Syrah, 25% Grenache, 25% Mourvèdre, 20% Carignan
Initiale Red is a classic Saint-Chinian blend — Syrah imparts spiciness and black pepper; Grenache Noir bestows soft fruit; Carignan expresses a rustic leather tone; and Mourvèdre offers warm hints of tobacco and chocolate. Aromas of blackberry and cherry jam are laced with toasted bread and pepper. A tender, joyful palate carries a trace of tannin, enhancing the finish.

AOP Minervois
25% Roussanne, 20% Grenache Blanc, 20% Marsanne, 20% Vermentino, 10% Grenache Gris, 5% Muscat Petit Grains
This pale, green-gold blend of white grapes entices with complex aromas of fresh white peaches and pears. The palate comes to life with beautiful substance, acidity, and finesse. An organic cuvée, this wine was crafted by a family domaine built upon five generations of winemaking wisdom.

A.O.P. Minervois La Livinière
70% Syrah, 20% Grenache Noir, 10% Carignan
Food pairing: Luscious with Chicken Curry and Spiced Jasmine Rice; Scampi and Sweet Pepper Sauté with Ouzo Cream Sauce; and Barbequed Red Mullet (or Redfish) with Sauce Provençale (Tomatoes, Garlic, Black Olives, Basil).
AOP Languedoc
75% Syrah, 16% Mourvèdre, 9% Grenache
This Syrah-dominant blend is velvety, yet fresh and offers an entrancing perfume of violet, bergamot, and cherry. The silky mouthfeel layered with red cherry and blackberry is refreshed by orange zest, and a hint of vanilla and eucalyptus. Resolves with wafts of balsamic and iris flower and a surprise note of brioche. The vineyards are maintained using responsible viticulture and are Terra Vitis certified. Made by the award-winning winemaker Diane Losfelt.

AOP Pézenas
70% Old Carignan, 30% Grenache Noir
This organic, biodynamic red is a robust mélange of herb and spice. The blend of Carignan and Grenache Noir expresses character and complexity with black fruit, black currant, plums, and hints of leather and licorice. Enjoy the long spicy finish.

AOP Saint-Chinian
65% Syrah, 20% Old Carignan, 15% Grenache Noir
This organic red delights with its aromatic sweetness of vanilla and chocolate. Cashew and a touch of smokiness round out the nose. The generous mouthfeel is soft and elegant, yet expressive. A “signature” of this domaine, Cuvée Signée embodies the Saint-Chinian terroir and the Domaine Des Jougla style — tradition balanced with innovation making this an all time favorite red wine.
