All of the wines we carry at Princess and Bear have small case productions and as each vintage varies from year to year, we want to offer tasting notes and technical information on past vintages we've carried for reference.

These wines are made by the most passionate winemakers and have a finesse and complexity that will keep you coming back for more. Many of the winemakers are contrarian and make wines in their own passionate way regardless of tradition or requirements to be an AOC wine.
Our many organic selections are presented below with the European Union organic leaf designation. Organic wines in the EU can use small amounts of organic sulphur, which helps make the wines remain stable over time.

IGP Coteaux d'Enserune
100% Viognier
A study in lush, floral debauchery, this organic Viognier tantalizes with a nose of citrus, lychee and lemon blossom and a fluid, lively mouth. In the hands of the owner and oenologue Stéphane Yerle, the viognier expresses masterfully. The wine is well balanced with just a hint of acidity to keep the palate alive and interested.

AOP Minervois
25% Roussanne, 20% Grenache Blanc, 20% Marsanne, 20% Vermentino, 10% Grenache Gris, 5% Muscat Petit Grains
This pale, green-gold blend of white grapes entices with complex aromas of fresh white peaches and pears. The palate comes to life with beautiful substance, acidity, and finesse. An organic cuvée, this wine was crafted by a family domaine built upon five generations of winemaking wisdom.

A.O.P. Minervois La Livinière
70% Syrah, 20% Grenache Noir, 10% Carignan
Food pairing: Luscious with Chicken Curry and Spiced Jasmine Rice; Scampi and Sweet Pepper Sauté with Ouzo Cream Sauce; and Barbequed Red Mullet (or Redfish) with Sauce Provençale (Tomatoes, Garlic, Black Olives, Basil).
AOP Languedoc
75% Syrah, 16% Mourvèdre, 9% Grenache
This Syrah-dominant blend is velvety, yet fresh and offers an entrancing perfume of violet, bergamot, and cherry. The silky mouthfeel layered with red cherry and blackberry is refreshed by orange zest, and a hint of vanilla and eucalyptus. Resolves with wafts of balsamic and iris flower and a surprise note of brioche. The vineyards are maintained using responsible viticulture and are Terra Vitis certified. Made by the award-winning winemaker Diane Losfelt.

AOP Pézenas
70% Old Carignan, 30% Grenache Noir
This organic, biodynamic red is a robust mélange of herb and spice. The blend of Carignan and Grenache Noir expresses character and complexity with black fruit, black currant, plums, and hints of leather and licorice. Enjoy the long spicy finish.

Vin de France
100% Carignan Gris
This rare Carignan Gris varietal is a gift of golden flavors: fresh pear, chamomile, and quince. A white wine with a dynamic personality, this organic cuvée expresses both bright, crisp notes and herbal smokiness. Because of the rarity of Carignan Gris, the domaine produced only 800 bottles of this wine. We are thrilled to be able to offer it to wine lovers in the US.

AOC Coteaux du Languedoc Pézenas
75% Syrah, 25% Cinsaut
This blend is, in a word, stunning. Christine Mouton Bertoli is a gifted winemaker. Her wines are as wonderful and feminine as she is. This flagship wine has flavors of ripe cherries and mocha balanced with good herbal aromas and good acidity to keep your tastebuds alive and interested. Think of lamb chops with spiced prunes, or Moroccan chicken.
AOP Languedoc
80% Mourvedre, 10% Grenache Noir, 10% Syrah
From a domaine in a village next to our founders' home, this rosé is fruity and spicy with nice strawberry flavors and a crisp finish. The light acidity gives your mouth brightness and joy.

IGP Côtes Catalanes
100% Grenache Noir
Grenache Rhapsody is one of the biggest, finest reds we have tasted in the Roussillon. This organic wine bursts with raspberry and black currant, tempered by a touch of balsam and green herbs, rosemary and thyme. The finish is delicate but persistent. A rich and balanced concentration with both complexity and subtle notes.
IGP Pays d'Herault
Viognier, Chardonnay, Roussanne, Muscat
In the glass, this Viognier-dominant blend is bright and crystalline. Rich aromas of stone fruit, white flowers and banana are balanced with notes of light pepper. A crisp opening finesses into a pleasant, medium body. The family-run winery practices Reasoned Agriculture, an approach to viticulture that balances farming and wine production with biodiversity, environmental and animal welfare, and the health of the surrounding lands.
IGP Pays d'Oc
85% Chardonnay, 15% Viognier
Fragrant white flowers and nice acidity characterize this delicious, all-occasion white wine. The Viognier adds floral notes to the freshness of the unoaked Chardonnay, lending complexity to the mouth. The Chardonnay imparts a lovely, lingering finish. One of our favorites!

Côtes du Roussillon
55% Syrah, 35% Carignan, 10% Grenache
This is a very balanced wine with great character, complex aromas and powerful taste. Deep red fruit, little bit of spices and a touch of oak in the end. The grapes are handpicked at optimum ripeness from the domaine's best, most ancient plots.
