All of the wines we carry at Princess and Bear have small case productions and as each vintage varies from year to year, we want to offer tasting notes and technical information on past vintages we've carried for reference.
Below is a list of sold out wines. Click the wine name below to view the Languedoc-Roussillon sommelier’s tasting notes.
These wines are made by the most passionate winemakers and have a finesse and complexity that will keep you coming back for more. Many of the winemakers are contrarian and make wines in their own passionate way regardless of tradition or requirements to be an AOC wine.
Our many organic selections are presented below with the European Union organic leaf designation. Organic wines in the EU can use small amounts of organic sulphur, which helps make the wines remain stable over time.
AOP Cotes du Roussillon
70% Grenache Noir, 30% Syrah
This medium-bodied, organic beauty conjures up memories of summer afternoons and grilling al fresco into the fall. Pleasant and crisp, both the nose and mouth deliver red-berry freshness. From one of the finest female winemakers of the Roussillon.
70% Grenache Blanc, 15% Carignan Blanc, 15% Roussanne
L'Égrisee brings refinement and delicious freshness without excessive exuberance, a touch of class that perhaps explains the meaning of its name, “diamond dust.” This all-occasion white is balanced yet lively with aromas of white fruit, flowers, fennel, and almond.
A.O.P. Minervois La Livinière
70% Syrah, 20% Grenache Noir, 10% Carignan
Food pairing: Luscious with Chicken Curry and Spiced Jasmine Rice; Scampi and Sweet Pepper Sauté with Ouzo Cream Sauce; and Barbequed Red Mullet (or Redfish) with Sauce Provençale (Tomatoes, Garlic, Black Olives, Basil).
Vin de France
The Macabeu grape shines here. Only 800 bottles of this wine from one single vineyard were made, so we are lucky to have it. Expand your palate here with a new organic grape variety!
Grenache blanc, Roussanne, Vermentino (a / k / a Rolle)
This white blend of Grenache Blanc, Roussanne and Vermentino has complex, elegant, gorgeous aromas of white flowers, citrus and quince, with great underlying minerality. Golden yellow color, brilliant, golden yellow highlights. The Roussanne is stunning! We love this wine!
AOP Pic Saint Loup
35% Grenache, 35% Syrah, 30% Mourvèdre
This beautifully crafted, flirty rosé from the great Pic Saint Loup appellation shines with a lovely salmon color. Tempting raspberry and strawberry aromas are enhanced by a pleasantly weighted palate and a crisp finish. For year round enjoyment.
AOC Coteaux du Languedoc Pézenas
75% Syrah, 25% Cinsaut
This blend is, in a word, stunning. Christine Mouton Bertoli is a gifted winemaker. Her wines are as wonderful and feminine as she is. This flagship wine has flavors of ripe cherries and mocha balanced with good herbal aromas and good acidity to keep your tastebuds alive and interested. Think of lamb chops with spiced prunes, or Moroccan chicken.
IGP Côtes Catalanes
100% Grenache Noir
Grenache Rhapsody is one of the biggest, finest reds we have tasted in the Roussillon. This organic wine bursts with raspberry and black currant, tempered by a touch of balsam and green herbs, rosemary and thyme. The finish is delicate but persistent. A rich and balanced concentration with both complexity and subtle notes.
AOP Languedoc Montpeyroux
30% Syrah, 30% Carignan (60 year old vines), 25% Grenache, 15% Cinsault
Food pairing: Surround yourself with the soft richness of this beautiful organic wine served with Moroccan Lamb Cammama with Date and Onion Sambal; or Barbara Batcheller’s West Indian Roast Pork with Honey Glazed Parsnips and Yams. A perfect evening...bluer than velvet was the night....softer than satin was the light.
AOP Cotes de Roussillon
50% Grenache Blanc, 40% Grenache Gris, 10% Roussanne

Hints of citrus and white peaches balanced with good fresh acidity and some weight in the mouth. It literally glides right down! Wonderful with grilled fish, veal blanquette, or a roasted chicken. A beauty!
40% Muscat, 20% Viognier, 20% Roussanne, 20% Grenache Blanc
This unusual blend of muscat, viognier, roussanne and white grenache is all from hand harvested and sorted grapes. The wine is bone dry, and grounded with minerality but with popping fruit flavors of peach, mango and citrus with spice on the finish.
