Vineyard Notes
Surrounded by hilly scrublands, varied terroir and pine woods, Domaine de Saliès lies in the heart of Cathar country, near the Montagne Noire and the Canal du Midi. Clay and limestone soils enrich the terroir which has full sun exposure. Classic Languedoc red grape varieties thrive in these vineyards including Grenache, Syrah, Cinsault, Carignan and Mourvédre, and international varieties such as Cabernet Franc, Merlot and Malbec. White varieties include Viognier, Ugni Blanc and, more recently, Sauvignon Blanc and Chardonnay.
Production Notes
Father and son winemakers, Xavier and Benoit Gombert vinify their wines in stainless steel tanks in a sheltered, underground cellar built in 1870. The cellar maintains a constant temperature throughout the year, imparting a character unique to the wines of Domaine de Saliès.
Winemaker Notes
Domaine de Saliès is within walking distance of our founder’s home! The young winemaker, Benoit Gombert, and his father, Xavier, are part of an incredible winemaking culture that extends all the way back to 79 CE when Mount Vesuvius erupted and Roman winemakers resettled in the Languedoc. One such winemaker built Villa Celiano and began producing wines that shipped all over the Roman Empire. In the 18th century, Château de Saliès was constructed on the grounds of Villa Celiano. The Camino de Santiago (the Way of St. James) led medieval pilgrims directly through the property. Five years ago, Xavier passed on the role of head winemaker to Benoit, who is in his mid-thirties. According to Xavier, his own wines were “rustic,” while Benoit's are “elegant and fine."
