All of the wines we carry at Princess and Bear have small case productions and as each vintage varies from year to year, we want to offer tasting notes and technical information on past vintages we've carried for reference.

These wines are made by the most passionate winemakers and have a finesse and complexity that will keep you coming back for more. Many of the winemakers are contrarian and make wines in their own passionate way regardless of tradition or requirements to be an AOC wine.
Our many organic selections are presented below with the European Union organic leaf designation. Organic wines in the EU can use small amounts of organic sulphur, which helps make the wines remain stable over time.

A.O.P. Languedoc
40% Bourboulenc, 30% Vermentino, 30% Clairette
Food pairing: Seafood heaven! Grilled halibut with pineapple-red pepper salsa; shrimp salad with chutney mayonnaise; seabass-cabbage spring rolls with ginger and chili dipping sauce. Delicious!

AOP Saint-Chinian
65% Syrah, 20% Old Carignan, 15% Grenache Noir
This organic red delights with its aromatic sweetness of vanilla and chocolate. Cashew and a touch of smokiness round out the nose. The generous mouthfeel is soft and elegant, yet expressive. A “signature” of this domaine, Cuvée Signée embodies the Saint-Chinian terroir and the Domaine des Jougla style — tradition balanced with innovation making this an all time favorite red wine.

IGP Pays d'Oc
50% Vermentino, 30% Roussanne, 20% White Grenache
This organic beauty is a blend of Vermentino, Roussanne, and Grenache Blanc from vineyards near the sparkling Mediterranean. The sea and the wild garrigue of herbs infuse the fruit and give the wine an aromatic complexity, creating a perfectly balanced, dry white wine with finesse.

AOP Minervois La Liviniere
75% Syrah, 25% Grenache
This organic, biodynamic wine is a blend of Syrah and Grenache from an old, revered domaine in the prized appellation La Livinière. This sultry, full-bodied red entices with aromas of dark fruit and spice. Elegant oak flavors taper to a fine, smooth finish.
AOP Saint Chinian
45% Syrah, 40% Grenache Noir, 15% Cinsault
Dark red fruit, spiciness, leather tones, and a long finish make this an all-occassion, “knife-and-fork” wine. A hearty Syrah, Grenache and Cinsault blend, Cuvée des Chevaliers reflects the rich history of the Milhau Lacugue estate, which was the site of a Roman villa and later offered rest and refreshment to medieval pilgrims en route to sacred sites in Spain.

IGP Pays D’Oc
60% Cabernet Sauvignon, 30% Merlot, 10% Petit Verdot
From the brilliant female winemaker Verena Wyss, this “beautiful song” bewitches with aromas of spice, licorice and cassis and notes of graphite. Bold complexity is balanced with smooth tannins and structure in an organic blend of Cabernet Sauvignon, Merlot, and Petit Verdot.
IGP Coteaux de Fontcaude
100% Vermentino
Fresh-cut herbs and fragrant floral aromas glide into bright tones of grapefruit and lemon in this summer-ready white wine. Made with Vermentino, a classic Mediterranean varietal, the “glug glug factor” of this wine makes it hard to resist, which is why it is one of our most loved wines.

Vin de France
100% Carignan
Carignan is KING of red grapes here! Totally adapted to this rough climate this is a stunning varietal if you keep yield low. Dark red fruit, leather tones and smashing fresh finish. Carignan is seeing something of a renaissance as old vines (and these are over 100 years old) and small yields make a lovely, concentrated, big wine. Only 200 cases produced.

100% Pinot Noir
Food Pairings: This is a lovely every day Pinot Noir that is delicious with Stuffed Pork Tenderloin, Cheese Plates and Roasted Root Vegetable Tagine.

AOP Saint Chinian Berlou
55% Syrah, 45% Lledonner Pelut (Hairy Grenache)
A gorgeous, full wine from hand harvested grapes grown in the coveted schiste soil of the Berlou micro-appellation that fills your mouth with spiced, mashed blackberries and a long, sexy finish.
Vin de Pays Coteaux de Fontcaude
50% Chenin Blanc, 50% Grenache Blanc
Food pairing: This beautiful white wine is an untraditional blend of Chenin Blanc and Grenache Blanc. The result is elegant and flavorful with just the right amount of minerality. Think Shrimp Pad Thai, Grilled Lemongrass Chicken and Halibut Cheeks with Ginger-Orange Sauce.

Côtes Catalanes
35% Roussane, 30% Grenache, 20% Viognier, 15% White Cariñena
Food Pairings: the aperitif, with spicy sandwiches, but also elegant grilled fish
