All of the wines we carry at Princess and Bear have small case productions and as each vintage varies from year to year, we want to offer tasting notes and technical information on past vintages we've carried for reference.

These wines are made by the most passionate winemakers and have a finesse and complexity that will keep you coming back for more. Many of the winemakers are contrarian and make wines in their own passionate way regardless of tradition or requirements to be an AOC wine.
Our many organic selections are presented below with the European Union organic leaf designation. Organic wines in the EU can use small amounts of organic sulphur, which helps make the wines remain stable over time.

AOP La Clape
40% Bourboulenc, 40% Grenache Blanc, 10% Viognier, 5% Marsanne, 5% Roussanne
Elegant and lively, this organic cuvée blends white Grenache and Bourboulenc with lovely touches of Viognier, Marsanne, and Roussanne. Herbaceous and floral notes highlight an appealing minerality from the white stones characteristic of the appellation. A round and precise mouth with delicate texture resolve into a long, bright finish.
IGP Pays d’OC
100% Sauvignon Blanc
This vibrant 100% Sauvignon Blanc expresses the primary aromas of this worldwide famous grape. Grown here in a hot climate it delivers aromas of citrus, white flowers, and pear. The exotic palate is balanced between freshness and roundness with a finish that is long and distinctive. The vineyards are Terra Vitis certified and the wine made by award-winning winemaker Diane Losfelt.

AOP Minervois
60% Grenache Gris, 30% Grenache Noir, 10% Syrah
At the end of winter, from the first rays of the sun, this fresh rosé wine with aromas of red fruits will delight your taste buds. The soft fruit is complemented by a balance between freshness and roundness on the palate. There is an alluring nuttiness in the finish.
A.O.P. Faugères
70% Grenache Blanc, 30% Roussanne
Food pairing: This wine which comes from “The Cathedral“ vineyard will bring you to your knees when served with Blue Cheese and Pear pastry appetizers; Roast Yuzu Chicken and Japanese slaw with Mirin Vinaigrette; or Tagliatelle of Wild Mushrooms.
AOP Limoux
50% Merlot, 20% Grenache Noir, 20% Malbec, 10% Syrah
This wine is an interesting blend of Mediterranean and Continental grape varieties. This garnet red will seduce you with lush notes of blackcurrant and raspberries. In the mouth forest strawberries, blackberries and spicy flavors deliver a perfect roundness. The wine is aged half in stainless steel tanks and half in French oak. The mild, melted oak creates soft tannins and brings together a beautiful, easy drinking cuvée with great aromatics and flavors.

AOP Minervois
75% Cinsault, 20% Grenache Noir, 5% Syrah
The aromatic persistence of this Grenache Noir, Cinsault and Syrah blend seduces with finesse and elegance. A delicate blush in the glass, this organic rosé offers refined aromas of red fruit and a round, well-balanced palate. The wines of this family domaine are the legacy of four generations of winemaking wisdom.

AOP Fitou
40% Carignan, 30% Grenache, 30% Syrah
“It’s another winner from this estate that offers a supple, sexy and medium to full-bodied personality to go with great aromas and flavors of blackberry and black cherry fruit, roasted herbs, leather and licorice. AOP Saint Chinian
80% Syrah, 20% Grenache
An alluring, purple-faceted ruby in the glass, this Syrah-dominant blend expresses concentrated blackcurrant fruit while maintaining an alluring complex palate. Aromas of truffles, passionfruit, licorice, and cocoa harmonize with a fine spiciness, long finish, and well-integrated oak.

AOP Rivesaltes Ambre
100% Grenache Blanc (White Grenache)
Food Pairings: Divine with room temperature Roquefort cheese, alone or on thin slices of baguette or crackers. If you love sweets it will be fabulous with Spiced Chiffon Pumpkin Pie. Or try it with Spiced Cake and Whipped Cream or a Hazelnut Chocolate Tart with Whipped Ginger-Marscapone Cream. Yuuuum!

IGP Saint Guilhem Le Désert
34% Chenin Blanc, 33% Grenache Blanc, 33% Roussanne
The delicate nose of this Languedoc white entices with aromas of flowers and orange peel. Notes of anise, jasmine, lavender, and spice create a full and charming palate. The lingering finish expresses balanced acidity and bright minerality.

IGP Pays de Caux
85% Syrah, 15% Cabernet Franc
This organic, medium-bodied red boasts sultry aromas of black fruit, smoky spices and herbs that enhance an opulent palate of complex fruitiness, Asian spices and Sichuan pepper. Syrah blended with Cabernet Franc imparts a beautiful, clear ruby color.
AOP Faugères
95% Syrah, 5% Grenache Noir
This “big wine” showcases Syrah at its best, grown on schiste vineyards. The nose is fragrant with red and black fruit and, when young, a hint of vanilla. The generous mouthfeel and round, luscious tannins resolve into a silky, lingering finish. Le Fou du Rec is a product of sustainable agriculture and has long aging potential.
