Elegant and lively, this organic cuvée blends white Grenache and Bourboulenc with lovely touches of Viognier, Marsanne, and Roussanne. Herbaceous and floral notes highlight an appealing minerality from the white stones characteristic of the appellation. A round and precise mouth with delicate texture resolve into a long, bright finish.
Savor this L'Epervier, the Hawk, with seafood paella, lobster pasta, sushi, and grilled fish in lemon sauce.

Vineyard Notes
The chalky windswept vineyards of Château Pech Redon sit on an old Roman island at 200 meters, with the Mediterranean Sea in view. The rocky soils of limestone, marl, and reddish sandstone produce wines with unique personalities.
The domaine’s yield is moderate due to the ecological choices of the winegrower. Grapes are manually harvested in crates and destemmed and sorted, in the vineyard.
In 2015, La Clape was classified as an AOP. It is designated one of the 7 "Crus du Languedoc,” the highest quality category. In the Occitan language spoken in the Languedoc in the Middle Ages and even now in some markets, La Clape means "cairn,” a mound of stones. In ancient times, La Clape was an island off the Roman port of Narbo (Narbonne) on the Mediterranean coast.
Production Notes
Aging takes place over 14 months on fine lees — in vats for Grenache Blanc and in 400-liter barrels for Bourboulenc. Direct pressing is used as well as cold settling for 24 hours at 41°F. Grapes undergo natural, spontaneous fermentation at 64-68°F.
Winemaker Notes
Winemaker Christophe Bousquet’s authentic Languedoc wines reflect the unique grape varieties and terroir of the region.
