Sommelier note: This beautiful small domaine is situated in the hillsides not far from Montpellier, in the award winning wine growing region called Montpeyroux. It has its own Cru which means special terroir! La Jasse Castel has only 12 ha. (30 acres) planted spread around 7 parcels. Each parcel with a different grape variety, varying soils and different orientation to the sun gives a different result in the fruit. This provides a broad range of blending material for the very fine winemaker! This “Bleu Velours”, Blue Velvet, is one of Pascale’s top range wines. Carefully selected grapes from specific vineyards and the oldest vines are from the King of Grapes: Carignan! “The Princess” is in love with the Carignan grape so you know this is her pick. All the varietals are vinified separately to allow careful blending afterwards. Every vintage has a different blend. The juice spends a long time in the chilled tank in touch with the skins to softly extract all the colour and flavor. After the fermentation is complete, the blend passes in 3-5 year old barrels of French oak for 12 months to soften up and mature the wine. Result is? Excellent! Soft red fruits in the nose, ripe cherry and plum, elegant start in the mouth and the wine builds up in taste. Round and full in the middle with a smooth and long aftertaste. Another one where you wish it wouldn’t end. A true Velour (Velvet)!
