Limoux is the birthplace of sparkling wines. Long before sparkling wine was made in the Champagne area, the monks in the Abbaye of Saint-Hilaire here in Limoux discovered the method of producing lovely bubbling wines! Domaine J.Laurens is a small producer here in the area and the name is a guarantee for quality! Jacques Calvel and his team handle their bottles like their children! The appellation requires hand picked grapes and for the classic Blanquette de Limoux it should be at least 60% local Mauzac grapes. Besides the Blanquette there are many very fine Crémants here in the Languedoc. For Crémant we use Chardonnay, Chenin blanc and Pinot Noir grapes. All the wines pass a classic second fermentation on the bottle to produce the fine and tiny bubbles we all love!
This top Cuvée Clos des Demoiselles offers a smashing, and some say preferable, alternative to classic Champagne! This is a serious Bang for your Buck. Hand-picked grapes, heavy selection on sorting table, so only the best grapes are chosen for this wine. After the final blend this wine will ferment 18 months in the bottle before it is ready. Result: Delicate and fine bubbles, hints of buttery toasted biscuit, white flowers and a long finish. Not only by-the-glass-wine but try it with white fish, poultry and white meats like veal or fine pork. Perfect!
