Vineyard Notes
These vineyards thrive on rocky slopes with good drainage. The “Aalenien” soil of quartz, schist, granite and limestone originated in the Jurassic period and is unique to the Languedoc.
Production Notes
The grapes are picked in the cool morning air and pressed immediately upon reaching the cellar. Cool-fermenting occurs in temperature-controlled tanks with regular pumping of the lees to impart a greater depth of flavour. The wine undergoes a secondary fermentation in the bottle and is aged for a minimum of 12-months.
Winemaker Notes
Domaine de Saumarez was founded in 2004 by husband and wife Liz and Robin Williamson who are from New Zealand and England respectively. In the spirit of liberté d’expression, they belong to “The Outsiders,” a community of like-minded producers who celebrate the Languedoc’s diverse soil, grape varieties climate and the freedom to make unique, non-traditional wines. Liz and Robin celebrate and nurture biodiversity in and around their vineyard, leaving the surrounding hedgerows, woodland and garrigue mostly untouched.
