This Limoux crémant is a classic expression of a sparkling wine made in the traditional method: méthode traditionelle, where the second fermentation takes place in the bottle, creating the bubbles loved the world over. Interesting and complex nose of lemon blossoms, honey and a light touch of green apple. The palate reflects a well-rounded dry crémant, expressing toast, dried apricots and roasted nuts. Fresh fruit and lime round out the finish.

This crémant pairs wonderfully with fish and seafood, especially lobster and crab. Serve with soft cheeses and caviar pie and risotto with mushroom sauces. Try with popcorn to jazz up movie night!

Vineyard Notes
These Chardonnay, Chenin and Pinot Noir grapes were grown in a composite of clay, sandstone and limestone. Dry Atlantic winds dominate the climate, along with gentle Mediterranean breezes, ideal for the slow, even ripening of the region's white wine grapes. The vineyard practices sustainable agriculture and uses organic fertilizer.
Production Notes
Grapes are hand-picked, placed in small perforated crates, then whisked away to the cellars to avoid oxidation. A non-aggressive pneumatic press extracts clear, pure juices and ensures a healthy harvest of quality base wines. Following the “traditional” method, the first of two rounds of fermentation takes place in stainless steel tanks with an integrated cooling system. After blending, the wine is bottled and yeast added, triggering the second fermentation. This phase, also called "foaming," is where the iconic bubbles are born! The wine remains on the lees for a minimum of 12 months.
Winemaker Notes
Our private label brut crémant is made by a family owned estate in the wine region of Limoux, near the famous city of Carcassonne. The first sparkling wine was discovered in this region in 1531, by a Benedictine monk at the Saint Hilaire Abbey, when his wine began to go through a second fermentation and produce bubbles. The soil at the domaine is rocky with clay, sandstone and limestone. All grapes are hand harvested and placed in small crates to avoid breaking the skins of the grapes prior to fermentation.
