The name of this domaine is in the Occitan language and it means “Valley of Light”. The valley is between the Cathar fortified town of Carcassonne and the birthplace of sparkling wines, the town of Limoux. The 17 hectares of vineyards of this estate sit at 350 meters altitude in a tiny isolated valley, which creates a magical micro-climate where the grapes thrive. The valley is in the foothills of the Pyrenees Mountains where the days are sunny and warm and the evening air is cool. This gives natural acidity or “freshness” to the wine meaning it keeps your palate alive. This appellation, recognizing the special terroir, allows both “Continental” grape varieties like Merlot and also Mediterranean grape varieties such as Grenache noir and Syrah. The wine is aged in French oak barrels for 9 months. The beautiful blackberry and cassis flavors have melted into the oak for a delicious, expressive wine with soft tannins. Serve slightly chilled.
