A crisp, mineral Viognier unlike any other, with a round, satisfying mouth feel and smooth palate, but with hints of warm spices like those of a graham cracker. Medium to full-bodied with fruit characteristics of peaches and asian pears. 

Pair with poached salmon in coconut milk and curry, honey chicken salad or even chicken fajitas.

Vineyard Notes
The property is roughly divided by 15 hectares falling into the AOP Faugères appellation and the remaining 9 hectares as AOP Pézenas Coteaux de Languedoc. The Faugères vineyards are of pure black and grey schist, whereas the Languedoc vineyards' yellow schist have a slightly higher clay content offering a contrast of more fruity wines against the spicier elegant wines from the Faugères vineyards. At altitudes between 300 and 400 meters, these rocky vineyards create wines that are concentrated yet fresh, perfect for the low intervention, biodynamic and organic practices at the heart of Domaine des Trinités winemaking.
Production Notes
Simon’s wines are made with great care from extremely high quality hand-picked grapes grown on these low yielding (20-30HL per hectare) rocky schist vineyards. Following a natural approach to wine making, temperature is strictly controlled during all phases to eradicate unnecessary use of additives, but ensuring clean wines exhibiting pure fruit characteristics. 
Winemaker Notes
Located on the prized shiste slopes of Faugères, Domaine des Trinités is an artisanal winery specializing in organic and biodynamic wines that express the unique terroir of the region. Simon Coulshaw is a highly regarded natural winemaker. His wines are celebrated by the likes of Jancis Robinson, the famous wine reviewer and scholar.
