Wine Profile
Vineyard Notes
This domaine works in harmony with nature and the environment. Thirty hectares of vineyards are situated between clay-limestone hills and the Bassin de Tau, on the Mediterranean Sea. A stream runs through the vineyard, supporting the biodiversity of the area. Trade winds caress the vines carrying scents of the garrigue and a hint of the sea. The Mediterranean climate allows the grapes to fully mature and express the typicity of the region.
Production Notes
Manual harvesting and sorting, natural fermentation in barrels, two daily foot punch-downs at the height of fermentation, then one to finish the maceration of about three weeks, pressing and aging in barrels for one year.
Winemaker Notes
Yves and Hugues Ricome built their winery in 2004 on land their family has been farming for generations. The domaine practices biodynamic and reasoned agriculture, working in harmony with nature and the environment. Thirty hectares of vineyards are situated between clay-limestone hills and the Bassin de Tau, on the Mediterranean Sea. A stream runs through the vineyard, supporting the biodiversity of the area. In 2007, they passed on the winemaking torch to their daughter, Anais Ricome. Anaïs has driven a transition to biodynamic farming and gained organic certification from the 2021 vintage. She makes wonderfully pure, unoaked wines reflecting the potential of the local varieties.
