This “Fireflies” cuvée lights up your glass with complex aromas of tangy citrus followed by luscious peach and apricot scents.  The palate overlays aromatic flavors of wild fennel and ripe apple into a balanced silky finish with a beautiful fleshy texture. To release all the beauty, decant this white wine for an hour or so and serve well chilled.

Serve with Halibut with Tarragon Beurre Blanc or Rigatoni with Sweet Italian Sausage.

Wine Profile
Vineyard Notes
Domaine Modat’s 23 hectares of vines are located in the commune of Cassagnes, in the prized Agly Valley near Perpignan. Domaine Modat officially converted to organic agriculture in March 2011 and is in the process of converting the vineyard to biodynamic production. Instead of using herbicides, the soil is worked and plowed to encourage the natural processes of breakdown and regeneration. The domaine’s respect for the environment is also reflected in the practice of the “minimal interference” farming method. The soil is mostly white, gray and red gneiss (granitic sand) over a base of fractured granitic rock, an ideal terroir for elegant wines. The well-drained soil gives the red wines fine, silky tannins, a light structure and great freshness. The terroir is also well-suited for the grape varieties used to make quality dry white wines such as this unusual and delicious blend.
Production Notes
Hand harvested and sorted at the vineyard at daybreak. All of the harvesters wearing headlamps give the feeling of fireflies in the early morning vineyard. The grapes are pressed early in the morning in the cave for freshness, with cold stabilization for 24-48 hours in temp controlled vats. Wild yeast is used. Aged on its lees in a mix of demi-muids (600l) and foudres for 6-8 months.
Winemaker Notes
Domaine Modat represents a return to winemaker Philippe Modat’s Catalan roots, where his grandfather once owned vineyards. While studying law in Bordeaux, Philippe developed a passion for wine that set him on a journey to founding his own domaine. In 2007, he and his father purchased land and vines in Cassagnes village in the heart of the Roussillon. In September 2008, they built a modern winery using eco-friendly organic materials equipped with thermo-regulated stainless steel tanks and new oak barrels. The estate is now run by Philippe’s two sons.
