This organic Macabeu varietal expresses a complex floral nose with hints of white stone fruits. The palate is crisp and balanced. This family-run domaine was founded in the early days of the Languedoc-Roussillon’s wine making renaissance. The vineyards lie in a small valley where every one of the vineyard owners farms organically, so this wine begins with the purest fruit anywhere.

Vineyard Notes
These Macabeu vines are cultivated on sun-warmed alluvial plains and the slopes of the Corbieres foothills. As the name suggests, the soil is mostly shaly marl or “schistes” which forces the roots to dive deep into mountainous terrain in search of water. The vineyards lie in a small valley where every one of the vineyard owners farms organically, so this is the purest fruit you can find anywhere.
Production Notes
The grapes are hand-harvested in the cool morning hours to preserve freshness and then directly pressed. Fermentation at cool temperatures and racking is protected from air. The wine is briefly aged in stainless steel tanks before bottling.
Winemaker Notes
Family-run Domaine Des Schistes was founded in the early days of the winemaking renaissance in the Languedoc-Roussillon. In 1989, the grandparents and parents of the current winemakers broke away from their local cooperative winery to start their own adventure. Since then, Domaine Des Schistes has been creating delicious wines from grapes grown and harvested in their own vineyards. Regional tradition is honored as is openness to innovation and organic winemaking. The bold move to independence benefited wine lovers and helped usher in a new era of winemaking!
