 Cinsault is the Pinot Noir of Languedoc: a less sustained color than the purplish Syrahs that we know well. This wine has pronounced fruit aromas, but it is delicate, with hints of cherry and a touch of cinnamon. This cuvée is the only wine from this domaine vinified and bottled without added sulfites. A very natural wine, but also fragile and not to be put in cellars.

This fresh and friendly ‘clean’ wine is to be drunk young with spicy dishes, shellfish and charcuterie/deli meats.  Chickpea salad topped with a few slices of chorizo seared in the pan with a pinch of cumin is heavenly with this wine.

Vineyard Notes
This cuvée is made entirely of organic Cinsault grapes, from a small plot of half a hectare (1 acre) planted in 1983. Located on the slopes of the extinct Baumes volcano, it is the most beautiful terroir of the domaine: a soil of Villafranchian gravel formed 3.5 million years ago from an old riverbed of the Herault. It is a very deep, high-quality terroir with excellent adaptation to drought. The wine is called “Abuelo” or grandfather, because the Cinsault vines are very old and still producing fruity high quality grapes, like a beloved grandfather.
Production Notes
All the vines are harvested by hand. In order to preserve the natural fruit of the grapes and keep freshness and elegance, at Domaine Allegria, they follow gentle vinification methods. The harvest for Cinsault Abuelo is in early September, the grapes are macerated on skins for 12 hours, the fermentation takes place in stainless steel tanks, aged for 4 months on the lees with regular stirring. The Cinsault Abuelo is bottled without added sulphites in order to preserve the natural purity of the fruit.
Winemaker Notes
Created in 2008, Allegria is the result of a Franco-Argentinian friendship between the French Aboville family and the Argentinian Mota family of winemakers: on the one hand the passion and enthusiasm of a young family raising five children; on the other, one of Argentina's greatest oenologists, Roberto de la Mota, creator of Cheval des Andes and Bodega Mendel, recognized by all fans of Malbec.
Food Pairing Notes

Other Notes
Ageability: Drink it today but also keep a few bottles to rediscover it completely in 5 years or more. An incredible experience. Store at 55 degrees, serve it relatively fresh, ideally at around 58 degrees.
