This crisp, dry rosé is named for an old Occitan folk song.  It sings the song of the Cinsault grape grown at high altitude in white, rocky soils.  A wine that sings of this terroir and sparkles fresh strawberries, citrus and peach flavors in your glass. The minerality on the finish from the limestone soil can make you dream of the far away South of France.

This aromatic rosé with lots of minerality is fantastic with charcuterie, grilled prawns and vegetables dipped in a lemon-mustard aioli.

Vineyard Notes
The vines grow on the windswept edge of the Cesse gorge, at between 250 and 350 meters (around 1,000 feet) on white pebbled limestone and clay vineyards. The limestone soil allows the vines to root deeply, giving aromatic and mineral expression to the wines.
Production Notes
Vinified in stainless steel tanks on the lees.
Winemaker Notes
Rouanet Montcélèbre is a family owned vineyard of 22 hectares (55 acres) located at the base of the Massif Central, in the Minervois appellation (named by the Romans for the goddess of wisdom Minerva, when the Romans brought grape vines here 2,000 years ago). Audrey Rouanet is the sixth generation in her family to farm the vineyards and make the family wines. Audrey took over when her father was killed in a tragic work accident. She is an exceptional winemaker who studied in Tuscany and California.
Food Pairing Notes

Other Notes
Ageability: Drink now or keep until 2023. Se Canta is a very old popular folk song, known all over Occitania, that Audrey's father used to sing; she named this special wine in his honor.
