Vineyard Notes
For more than 40 years, Domaine de la Rochelierre has practiced the Cousinié method in its 15 hectare vineyard, using only organic, herbal and mineral infusions in their farming. The herbal sprays are custom created for each specific vineyard. The domaine is located in the village of Fitou, the cradle of the Pays D'Oc. The soils are a mix of hard limestone, clay and schist. The vines benefit from a sunny, dry climate and the "Tramontane," a strong breeze from the northwest. The Mediterranean Sea is just a mile or two away from the vineyards.
Production Notes
The Fabre family hand-harvests the grapes at the optimal time of maturity, which leads to a flavorful, well-balanced wine. The harvest is destemmed before undergoing traditional maceration. Depending on the cuvée, aging takes place in temperature-controlled, stainless steel tanks to manage fermentation and preserve the aromas; or in barrels on fine lees with batonnage to ripen the tannins and aromas and develop “roundness.” A 17-day period of fermentation includes pump-ups and load-shedding. Privilege Rouge is aged for 11 months in oak barrels (a third of the oak is new).
Winemaker Notes
Domaine de la Rochelierre is owned and operated by the Fabre family who have been growing grapes and producing wine on the 37-acre property for four generations. Jean-Marie Fabre and his wife Emilie, the younger generation, manage the vineyards and the wine production with skill, wisdom and passion. They are deeply committed to organic farming practices and all aspects of winemaking.
