An unforgettable organic blend of four grape varieties from small plots with very different soils, La Pimpanela’s alluring aromas evoke the herbs and spices of the south of France. Blackcurrant, blackberry and a hint of raspberry awaken the palate. Notes of tobacco complement lush flavors of cherry, chocolate, balsamic, and vanilla.  The soft, fresh texture evolves into a rich body with firm tannins. In warmer months, enjoy slightly chilled.

The energy and ardor of this Occitan ‘peony’, La Pimpanela, make it the perfect pairing for hearty lamb and other grilled meats, as well as exotic Indian and Chinese dishes with sweet and sour elements.

Vineyard Notes
A beautiful, small, organic domaine, La Jasse Castel is situated in the hillsides near Montpellier in the award-winning winegrowing region of Montpeyroux. The vineyards include a century-old Cinsault plot near the village of Arboras, an ancient Carignan tucked away amongst the Olivettes, a purebred Syrah on the edge of an oak forest, and a goblet-trained Grenache in the heart of the Seranne landscape. Because of its unique terroir, this area was granted its own Cru. Varying soils and different orientations to the sun produce different characteristics in the fruit giving great complexity to the wines. The soil is clay and the subsoil is quite calcareous. The soils are very old and influenced by the thyme, rosemary, and lavender of the garrigue.
Production Notes
La Pimpanela is an alluring blend of Grenache, Syrah (from 30-year-old vines), Carignan (from 50-year-old vines), and Cinsault (from 100-year-old vines). The grapes are hand-harvested in small crates and fully destemmed. Each grape variety is vinified separately. Maceration takes three to five weeks followed by aging in tanks for six months. The bottling is done at the winery and in the spring.
Winemaker Notes
Winemaker, Pascale Riviere’s transformation from city dweller to winemaker was prompted by love at first sight—she fell in love with her first vines on the highest point of the Causse de Montpeyroux, and the nearby 17th century sheep barn. Standing tall against the wind, bathed in sunshine, La Jasse Castel overlooks the Hérault Valley. In theory there was no particular reason why Pascale should become a winemaker, yet everything led her to this. A former journalist, teacher and writer, she told us: “my growing desire to make wine and own a domaine came to fruition in 1998. Since then, every day has been magical, sensual. A wonderful discovery and a learning process.” For her, the word “culture” has found its roots again — the never-ending story of our shared humanity. Pascale is a founder and still part of a group of celebrated female winemakers called the "Vinifilles.”

Ageability: Drink now after decanting for an hour or cellar until 2027. La Pimpanela means “peony” in the old Occitan language.
