 This appealing organic wine opens with the crispness of red cherries surrounded by mashed blackberries and strawberries. Underlying is a nice minerality and slight spiciness. On the finish there are hints of the herbal garrigue and even a bit of black olive. A complex but relaxed wine that is friendly, fruity and interesting.

Enjoy Esprit d’Automne with grilled meats, traditional dishes (cassoulet, stew, etc.) and slightly spicy exotic cuisine such as stir fried beef with orange sauce.

Vineyard Notes
Although the Greeks arrived in this area with vines in the 5th C BCE, after eruptions of Vesuvius almost 2,000 years ago, many Roman winemakers relocated and the Languedoc was one of their chosen landing places. La Livinière (from the Latin word for ‘vine’) was one of the prized areas for the displaced Romans to plant vines, and they named the surrounding region the ‘Minervois’ after the Roman Goddess of Wisdom. The land, with its soil of flint, silica clay, quartz, marble and limestone, proved to be perfect, and grape vines have been planted there for millenia. The village of La Livinière and 4 surrounding villages gained their own appellation and ‘Cru’ status in 1999, the first in the Languedoc, and the wines represent the best-of-the-best in the Minervois. Domaine Borie de Maurel practices organic and biodynamic agriculture.
Production Notes
Vinified according to an ancestral local method, aged without chemical manipulation. Unoaked.
Winemaker Notes
In 1989, Michel Escande exchanged his passion for sailing for a new passion — winemaking. He and his wife settled on the mainland, scraping together enough to purchase a five hectare vineyard, wine cellar and house. With the tenacity of a sailor and the faith of a peasant farmer, Michel learned everything there was to know about his land. In time, he realized that he was in possession of a viticultural treasure. By the early 90s, the international press had christened Michel “the wizard of Felines” in appreciation of his first cuvées of Sylla. Today, he is still more than worthy of that title.

Ageability: Drink now or keep until 2027. Serve at 60°​​F or slightly cooler in summer (57°F). The name means Spirit of Autumn.
