This easy-drinking, fresh white wine is one of our most popular wines. Viognier grapes impart enticing floral and fruity aromas while the White Grenache adds a pleasant acidity and long finish. This wine hails from vineyards tended with sustainable farming methods on the coveted schiste soil of the Berlou micro-appellation.

This “ideal thirst quencher” is lovely alone as an aperitif and pairs beautifully with grilled fish.

Vineyard Notes
The vineyards are situated on the coveted schiste soil of the Berlou micro-appellation.
Production Notes
The use of sustainable farming methods means no chemical fertilizers and minimal use of pesticides and weedkillers. The harvest is done by hand for Octavian shale soils and by machine for souberges soils. Vinification, including aging on the lees, occurs in small stainless steel vats at regulated temperatures. A cold, pre-fermentation maceration extracts the maximum fruit character. Grape varieties are vinified together according to their harvest date.
Winemaker Notes
Olivier Pascale comes from generations of winemakers. He and his wife, Fabienne, tend the vineyards together, then work their magic in the cave on small batch wines. In addition to the traditional Languedoc grape varieties (Grenache, Syrah, Mourvèdre and Carignan), in 2009 Olivier planted Counoise, Sangiovese and Greek Assyrtiko vines to bring a more Mediterranean influence to this domaine’s impressive range of wines. We love the playful, "out of the box" names Olivier dreams up for these special wines.
