A pure and powerful Syrah that is an explosion of ripe fruit and spices. The nose is a bouquet of cassis, smoky herbs and grilled meats. It is refined and elegant and glides silky across the palate with moderate acidity and soft tannins.

Chateau de L’Ou is a 30-hectare estate, planted with 26 hectares of vines and 4 hectares of olive trees in the town of Montescot in the Pyrénées-Orientales, 10 km south of Perpignan. The 26-hectares adjoining the estate are on alluvial marl soils, laid on terraces of the dry Reart river. The Infiniment Syrah comes from these Alluvial marls of the Roussillon plain.
Production Notes
Manual harvest on small yields (15hl/ha). The destemmed grapes are placed directly in 300-liter barrels. Maceration lasts 3 to 4 weeks with manual punching down, then each barrel is emptied and pressed. The wine finishes fermentation in these same barrels, aging for 12 to 14 months.
Winemaker Notes
Loved by wine critic Jeb Dunnick, this domain is run by the husband-and-wife team, Séverine and Philippe Bourrier. Séverine came to winemaking through raw passion, rather than family tradition and legacy. She studied oenology and worked in Bordeaux for a decade before becoming one of the finest female winemakers in the Roussillon. Philippe is the wise, earthy agronomist. Together, they restored an old château, revived vineyards and rechristened the estate L’Ou, Catalan for "egg," a reference to the oval-shaped valley surrounding the estate.

Ageability: Drink now or keep until 2035 or longer. Decant for an hour and serve slightly chilled.
