This brilliant, golden yellow wine, has a complex and elegant nose, generous with white flowers, citrus and quince aromas. The palate is delicate and round, with a structured body, good intensity and a nice lift on the finish.

This wine is wonderful with oysters, fried calamari, pan fried fish and aged cheeses.

Vineyard Notes
The vines grow on the windswept edge of the Cesse gorge, at between 250 and 350 meters (around 1,000 feet) on white pebbled limestone and clay vineyards.  The limestone soil allows the vines to root deeply, giving aromatic and mineral expression to the wines.  The vines for this crisp, clean wine sit on windswept ridges high above caves with prehistoric drawings.  The rocky limestone soil gives great freshness to this organic wine.
Production Notes
Organic bee friendly grapes. Fermentation in stainless steel tanks with regular bâtonnage (stirring of the lees). Traditional corks.
Winemaker Notes
In 1987, Bernard and Annie Rouanet embarked on the adventure of buying their first vineyard and creating their own domaine in Montcélèbre. Fast forward to the 2012 vintage — their daughter, Audrey, returned with a diploma in viticulture and oenology, making her the sixth generation in her family to farm the vineyards and make the family wines.  When her father was killed in a tragic work accident, Audrey took over despite her young age. Today, she is an exceptional winemaker who has studied in both Tuscany and California. She avoids farming with any chemicals, even organic ones, that are harmful to the endangered local bees. So her wines are not just organic, they’re also bee friendly!
