Round, soft, rich and lovely are our words for this luscious award-winning wine. Noblesse du Temps is a powerful wine with velvety, ripe tannins, on notes of black fruits, leather, and roasted cocoa.  The long oak aging develops a soft and round mouthfeel. A beautiful, long silky finish helps us appreciate the ‘Nobility of Time’ in the glass.

Noblesse du Temps will go wonderfully with a beef rib roast, spicy Moroccan lamb, game, and hard cow cheeses.

Vineyard Notes
Since 1979 Jean-Louis and Anne-Marie (Jean-Marie's parents) have run the vineyard following the “Méthode Cousiné”. This is ‘beyond organic’ by looking at each vine and the whole vineyard as being one organism that needs to be enriched with high quality custom made organic amendments, homeopathic sprays, leaf feeding and soil balance, all with maximum respect for soil microbes, friendly insects and the entire ecosystem. This produces a finer, more flavorful grape harvest giving the winemaker the opportunity to make a fine, clean wine free of commercial manufactured chemicals. Owing to the family’s dedication to producing the highest quality grapes with maximum respect for the environment they have received the HVE (Haute Valeur Environementale) certification of farming practices that protect biodiversity and high environmental protection every year since 2017.
Production Notes
Free run juice vinified in stainless steel tanks, then the wine is aged in new, lightly toasted barrels for 13 months.
Winemaker Notes
Winegrowers for four generations, the Fabre family manages the 15 hectares of the estate, located in the historic heart of the village of Fitou, the center of the first Languedoc appellation. It was in 1998, after finishing his studies in oenology and having hesitated with a career as an officer in the gendarmerie, that Jean-Marie decided to buy the family estate from his parents. In 2006, in the salon, Jean-Marie met Emilie who, after studying sports, had become passionately involved in the family estate of the Côtes du Rhône in Cairanne. In 2008 Emilie joined Jean-Marie in Fitou, together they were able to build their family step by step and the new development of the estate. In 2015 the estate then took a new turn with the construction of a state of the art new cellar and tasting room at the entrance to Fitou village, surrounded by old Carignan vines. This allowed Jean-Marie and Emilie to combine technical mastery, energy savings and an architectural signature all in one place, looking to the future.

Other Notes
Ageability: Drink now or keep until 2037. If you open it before 2024 it is best to decant the wine 5 to 7 hours before your meal. This will reveal the very strong character of the wine, both the ripe black fruits, but also and especially the notes of roasted cocoa and cinnamon. Noblesse du Temps means Nobility of Time.
