This is a big beauty! Soft in the mouth, but powerful with complex flavors.  Think stewed fruits, chocolate, and sweet spices.  Add a touch of candied orange peel and you have a luscious rich finish to a wonderful food wine.

Enjoy with a Beef Bourguignon or a Mexican Pork Mole.

Wine Profile
Vineyard Notes
A beautiful, small, organic domaine, La Jasse Castel is situated in the hillsides near Montpellier, in the award-winning winegrowing region of Montpeyroux. The 12-hectares of vineyards is made up of a century-old Cinsault plot near the village of Arboras, an ancient Carignan tucked away amongst the Olivettes, a purebred Syrah on the edge of an oak forest, and a goblet-trained Grenache in the heart of the Seranne landscape. Because of its unique terroir, this area was granted its own Cru. Varying soils and different orientations to the sun produce different characteristics in the fruit. The soil is clay and the subsoil is quite calcareous. The soils are very old and influenced by the thyme, rosemary, and lavender of the garrigue. LES COMBARIOLLES, is the name of a hamlet located between the villages of Montpeyroux and Jonquieres. It is the first vineyard that Pascale planted in 2001 following the creation of her domaine. The soils are dry and gravelly, the ideal terroir for quality Grenache.
Production Notes
The grapes are hand harvested in small crates, with low yields 15/25 hl/ha. The grapes are destemmed and then a slow fermentation. The wine remains in tank for 4 to 5 weeks, then aged 18 months: the Grenache in vats and the Syrah in barrels. Then the wines are blended.
Winemaker Notes
Winemaker, Pascale Riviere’s transformation from city dweller to winemaker was prompted by love at first sight—she fell in love with her first vines on the highest point of the Causse de Montpeyroux, and the nearby 17th century sheep barn. Standing tall against the wind, bathed in sunshine, La Jasse Castel overlooks the Hérault Valley. In theory there was no particular reason why Pascale should become a winemaker, yet everything led her to this. A former journalist, teacher and writer, she told us: “my growing desire to make wine and own a domaine came to fruition in 1998. Since then, every day has been magical, sensual. A wonderful discovery and a learning process.” For her, the word “culture” has found its roots again — the never-ending story of our shared humanity. Pascale is a founder and still part of a group of celebrated female winemakers called the ""Vinifilles.”
