 This stunning, pale yellow wine with golden reflections is full of freshness with minerality as its support.  Layers of citrus, verbena, wild herbs, fennel pollen and clementine zest shimmer around this strong structure.  The wine has beautiful tension and a touch of tannins making it a spectacular food wine.

Perfect alongside foie gras and honey, white fish in a tangerine beurre blanc sauce, roasted pork or simply as an aperitif with soft cheeses.

Vineyard Notes
The vines at Domaine Bernatas sum up the richness of the Limoux terroir. For the most part oriented towards the North, their soils store an interesting freshness which gives the wines a wonderful tension. Worked without chemical inputs or pesticides, and taking into account the lunar cycles, each plot reveals a distinctive personality captured in each bottle. They plow their soils, a light scraping to aerate the clay soils found on their plots. All weeding work is done mechanically. No weed killers are used or other chemicals in the vineyard. To protect their vines and the crops, they use organic copper and sulfur sprays, supplemented by spraying plant infusions (horsetail, nettle, wicker, etc.). These are the recipes of their biodynamic agriculture. The hands are the main tool in tending the vines. In their small farm (6.5 ha), they have the advantage of being able to work each plot by hand. From winter pruning to harvesting, including spring green harvesting (pruning of the vines, debudding, trellising, etc.), everything is done by hand. Slow and patient work, sometimes exhausting, which allows them to spend a lot of time in the plots and to get to know each plot better. The work of the winegrower never stops and observation is an integral part of ongoing learning.
Production Notes
The fermentation is carried out using indigenous yeasts. The doses of sulphites (natural antiseptic helping to preserve wines) are minimal. The aging of this white takes place in 20 hL casks and 500L barrels for 8 months. Large containers foster micro-oxygenation of the wine with very minimal oak aroma. In the vineyard and in the cellar, chemicals are prohibited.
Winemaker Notes
Two brothers, one land...Jerome and Stephan Bernatas. After each having led their careers in journalism and the distribution of newspapers and magazines on their own, they joined forces to create the Domaine Bernatas in Limoux in the last days of 2018. As close as possible to their family roots, they have the ambition to raise living wines, wines that express the delicacy and freshness of this magnificent terroir, which extends over the foothills of the Pyrenees. “The principles of biodynamic agriculture, living soils, biodiversity, perennial culture, lunar and solar cycles, guide us in the pursuit of this goal. We ban pesticides and other chemical products from our farm, both in the vineyard and in the cellar. At Domaine Bernatas, Nature has all the rights”.
