The dark fruit, powerful spices, and herbaceous aromas of this Syrah entice the senses. The rich, upfront mouthfeel resolves into silky tannins. Surrender to the lingering finish...until your next luscious sip. Domaine Borie de Maurel practices organic and biodynamic agriculture.

Pair this bold red beauty with grilled lamb in lemon-anchovy-fennel marinade and baked chutney-balsamic red onions; or pasta with grilled spicy Italian sausage and  sautéed broccolini, grana, and toasted breadcrumbs.

Wine Profile
Vineyard Notes
After eruptions of Vesuvius over a millennium ago, many Roman winemakers settled elsewhere. La Livinière (from the Latin word for ‘vine’) was one of the designated areas for the displaced Romans to plant vines. The land, with its soil of flint, silica clay, and limestone, proved to be perfect, according to the winemakers. The village of La Livinière gained its own appellation not so long ago and, together with 4 other villages, represents the best-of-the-best in the Minervois. Domaine Borie de Maurel practices organic and biodynamic agriculture.
Production Notes
The grapes are handpicked, crated in small quantities, and carefully placed into the vat to ferment in the simplest possible way with the grapes still intact. Aging takes place over 15 to 18 months, without the use of wood.
Winemaker Notes
In 1989, Michel Escande exchanged his passion for sailing for a new passion — winemaking. He and his wife settled on the mainland, scraping together enough to purchase a five hectare vineyard, wine cellar and house. With the tenacity of a sailor and the faith of a peasant farmer, Michel learned everything there was to know about his land. In time, he realized that he was in possession of a viticultural treasure. By the early 90s, the international press had christened Michel “the wizard of Felines” in praise of his first cuvées of Sylla, his flagship wines. Michel named Cuvée Sylla for his grandfather and his son, both of whom carry this name.
