A sensuous, rich, velvety,  generous wine that seems to offer everything at a glance.  Under the  blood red robe are hidden all the tender secrets of Andalusia nights, a feria of aromas and spice, complex and alluring.  Aged in tank and bottle, no oak because the wine is already so complex! The winemaker says "Be patient with this beauty and in 5 or 10 years it’s a gypsy dream that you’ll see dancing under Seville moonlight in your glass."

Dream of neighboring Andalusia and drink with Chorizo and Chicken Paella; Grilled Harissa Chicken; or Traditional Beef Stew with Sage Cornbread.

Vineyard Notes
The vines of the Borie de Maurel cling to the stony slopes of the Montagne noire, north-east of Carcassonne. The particular characteristics of this terroir enabled recognition as the AOC La Livinière in 1999, the first specific village appellation of the Languedoc region.
Production Notes
Aged for 18 months in stainless steel, and then bottled. Harvest is manual, then long fermentation, natural yeast.
Winemaker Notes
In 1989, Michel Escande exchanged his passion for sailing for a new passion — winemaking. He and his wife settled on the mainland, scraping together enough to purchase a five hectare vineyard, wine cellar and house. With the tenacity of a sailor and the faith of a peasant farmer, Michel learned everything there was to know about his land. In time, he realized that he was in possession of a viticultural treasure. By the early 90s, the international press had christened Michel “the wizard of Felines” in appreciation of his first cuvées of Sylla. Today, he is still more than worthy of that title.
