La Dérive is a serious, powerful beauty. The blend is somewhat of ’New World’ wine but from ‘Old World’ vineyards and wine making skills. Intense and deep color, complex nose with dark red fruit, baking spices and the lovely herbal ‘garrigue’. In the mouth complex flavors, smoky and spicy with soft but substantial tannins. This is a ‘comfort’ wine which you will enjoy sip by gorgeous sip!

Wonderful with Oven Rosemary-Laced Veal Chops; Beef Tenderloin with Bordelaise Sauce; or Crispy Duck Pancakes with Hoisin Sauce.

Vineyard Notes
The estate is located about twenty kilometers north of the famous medieval city of Carcassonne. Of the 125 hectares of the estate, 21 are devoted to vines, the rest is made up of natural areas (garrigue, woods). This is where the east and west winds meet. In turn, they bring the intense Mediterranean heat necessary for the southern grape varieties (Syrah and Grenache) and the Atlantic cool humidity allowing the oceanic grape varieties (Merlot, Cabernet Sauvignon and Franc, Cot and Fer Servadou) to blossom fully.
Production Notes
The grapes come from the best plots of the estate and are harvested and vinified by variety and by plot. The grapes are mostly destemmed and macerated in vats for a period varying between three weeks and a month. The Cab is placed in vats for around four weeks. Delestages and pumping over are practiced at the beginning of maceration. Syrah is vinified in demi muids (600 liters) of oak for a blend of their best plots since the goal is not to make very oaky wines, but to use slow oxygenation.
Winemaker Notes
Domaine de Cabrol to the north of Carcassonne is in a very interesting appellation where grapes of the Continent are allowed as well as the traditional Mediterranean grapes. It is owned by the Carayol family, who took over in 1989. Unfortunately Claude Carayol, the charming and handsome winemaker for the last 35 years who was known throughout the region as an exceptional winemaker, passed away last year. His energetic son Nicholas has taken over along with the team that has been working for the domaine for many years. We are pleased to offer this fantastic vintage, made by Claude.

Other Notes
Ageability: Can be drunk immediately or kept up to 15 years. Drink at 63°F, open and decant at least 1 hour before serving. La Derive means The Drift and it refers to the winds that are always present in the vineyards.
