This gorgeous, full-bodied blend of Lledoner Pelut, Carignan, Syrah, and Mourvèdre hails from the coveted schiste soil of the Berlou micro-appellation. Intriguing herbal scents resolve into bold flavors of spiced, mashed blackberries, followed by a long, silky finish.

This wine pairs beautifully with traditional savory meat dishes, t-bone steak with thyme and garlic butter, duck rillettes salad with orange-ginger vinaigrette, and traditional cassoulet. Serve slightly chilled.

Wine Profile
Vineyard Notes
The vineyards are situated on the coveted schiste soil of the Berlou micro-appellation, producing wines with finesse.
Production Notes
Use of sustainable farming methods means no chemical fertilizers and minimal use of pesticides and weed killers. The harvest is done by hand from Octavian shale soils and by machine for souberges soils. The winemaking takes place in small vats and begins with a cold pre-fermentation maceration in order to extract the maximum fruit essence. Grape varieties are vinified together according to maturity. There is a long fermentation period with punching down, then half of the blend is aged for 12 months in large, old oak vats.
Winemaker Notes
Olivier Pascale comes from generations of winemakers. He and his wife, Fabienne, tend the vineyards together, then work their magic in the cave making small batch wines. In addition to the traditional Languedoc grape varieties (Grenache, Syrah, Mourvèdre and Carignan), in 2009 Olivier planted Counoise, Sangiovese and Greek Assyrtiko vines to bring a more Mediterranean influence to this domaine’s impressive range of wines. We love the playful, "out of the box" names Olivier dreams up for these special wines.
Food Pairing Notes
