This organic, bee-friendly red has an intense crimson color with deep purple highlights. The nose is complex but elegant with generous black fruit,  spice and garrigue aromas, along with slight sour cherry, cocoa and smoky aromas.  The palate is rich and velvety with hints of black fruit and spice, silky tannins and smooth, slightly mineral, structured body that lingers in your mouth.

This versatile wine can be served with pork chops with a barbecue sauce and blackberry glaze ; Rib of beef with a rosemary, garlic and bread crumb crust; Aged cheeses such as Cantal; Chocolate desserts; and raspberry desserts.

Wine Profile
Vineyard Notes
Rouanet  Montcélèbre is a family owned vineyard of 22 hectares located on a spectacular limestone ridge. The vineyards lie at the beginning of the Massif Central, an expansive highland of mountains and plateaus in Southern France. The vineyards are in the Minervois appellation, named by the Romans in honor of Minerva, the goddess of wisdom, when they brought grape vines to the region 3,000 years ago.
Production Notes
Manual harvest, total destemming, temperature-controlled fermentation, traditional vinification in cement.
Winemaker Notes
In 1987, Bernard and Annie Rouanet embarked on the adventure of buying their first vineyard and creating their own domaine in Montcélèbre. Fast forward to the 2012 vintage — their daughter, Audrey, returned to the area with a diploma in viticulture and oenology. When her father was killed in a tragic work accident, Audrey took over despite her young age of just 26 years. Today, she is an exceptional winemaker who has studied in both Tuscany and California. She avoids farming with any chemicals, even organic ones, that are harmful to the endangered local bees. So her wines are not just organic, they’re also bee friendly!
Food Pairing Notes
Pork chops with a barbecue sauce and blackberry glaze; Rib of beef with a rosemary, garlic and bread crumb crust; Aged cheeses such as Cantal; Chocolate desserts; and raspberry desserts.
Other Notes
Ageability: Drink now or cellar until 2028. Decant in a cool area for at least 2 hours before enjoying slightly cool.
