Sommelier note: In 2005 Barbara and Pierre Sibille left the French Alsace region and settled as winemakers in the Minervois. What a life change! As with many ‘Outsiders’ they were well received in the Languedoc region and in no-time built up a reputation. Pierre is an educated winemaker and worked as regisseur in one of the cooperative cellars in Alsace. Barbara got her education in the school of agriculture in Carcassonne. Well prepared, they started their new adventure in Laure-Minervois.

The vineyards are planted with ‘modern’ and classic varietals: Chardonnay, Viognier and Roussanne for white, Grenache, Carignan, Mourvèdre and Syrah as classic reds, Merlot and Marselan more modern reds. They work 15 ha of vineyard and all is organic, of course.

Their Syrah has spiciness and a deep character.  All grapes are hand picked and destemmed before entering the tank. Soft maceration on the skins, no aging on oak, this wine delivers primary aromas of dark fruit like black currants and cooked blackberries, with a lovely soft after taste.  Perfect with stewed rabbit and mustard (local dish), and grilled vegetables in tomato sauce and with olive oil.
