This red blend has a very dense dark ruby ​​red color with an almost viscous consistency. Aromatic on the nose, with intense notes of plum and a spicy scent of cinnamon. The palate is ripe, almost compote-like berry fruit paired with a strong tannin structure. An extremely powerful and complex wine with an intense and long-lasting finish.

This red goes perfectly with porcini mushroom risotto and a slice of smoked duck breast or a filet of beef.

Vineyard Notes
The chalky limestone vineyards of Château Pech Redon sit 200 meters above the Mediterranean sea on diverse soils of limestone, marl, and reddish sandstone. The domaine’s yield is moderate due to the ecological choices of the winegrower. Grapes are manually harvested in crates and destemmed and sorted in the vineyard. In 2015, La Clape was classified as an AOP. It is designated as 1 of only 6 "Crus du Languedoc,” the highest quality category. In the Occitan language spoken in the Languedoc in the Middle Ages, La Clape means "cairn,” a mound of stones. In ancient times, La Clape was an island off the Roman port of Narbo (Narbonne) on the Mediterranean coast.
Production Notes
Centauree Rouge is the fruit of the oldest vines, harvested by hand, grapes are sorted 3 times, notably on a vibrating table. Then follows a maceration of 5 weeks and an aging in 500 liter barrels for 24 months. All wines at Pech Redon are naturally fermented.
Winemaker Notes
The estate was created at the beginning of the 20th century, but in 1988 the Bousquet family fell in love and took over. Winemaker Christophe Bousquet strives to create authentic Languedoc wines reflecting the unique grape varieties and terroir of the region. The Chateau stopped using chemical products in 1998 by switching to Reasoned Agriculture and then to Ecocert-certified Organic Agriculture in 2005.
