Wine Profile
Vineyard Notes
The domaine is situated in the foothills of the Cevennes on the famous shiste slopes of Faugères. At altitudes between 300 and 400 metres, these rocky vineyards create wines that are concentrated yet fresh, perfect for the low intervention, biodynamic and organic practices at the heart of Domaine des Trinités winemaking.
Production Notes
Fermentation takes place in open barrels for 12 weeks. Aging takes place in large demi muids ( 500 liters barrels) for 22 months.
Winemaker Notes
Simon Coulshaw is a highly regarded natural winemaker. His wines are celebrated by the likes of Jancis Robinson, the famous wine reviewer and scholar. Located on the prized shiste slopes of Faugères, Domaine des Trinités is an artisanal winery specializing in organic and biodynamic wines which express the unique terroir of the region.
Food Pairing Notes
Pair Cuvée 42 with hearty dishes like grilled ribeye with garlic butter and barbecued spareribs.
Production
In “The Hitchhiker's Guide to the Galaxy” by Douglas Adams, the number 42 is the "Answer to the Ultimate Question of Life, the Universe, and Everything", calculated by an enormous supercomputer named Deep Thought over a period of 7.5 million years. Unfortunately, no one knows what the question is. But the wonderful winemaker Simon Coulshaw loved it anyway.
Other Notes
Ageability: Drink now or keep until 2025.
