This vigorous sparkling rosé lights up the glass with delicate bubbles and subtle shades of cherry. A rich raspberry nose harmonizes with a hint of soft stone fruit on the palate. Chardonnay and Chenin dominate, but it’s the Pinot Noir that brings this wine to fullness. The vineyard practices sustainable agriculture and uses organic fertilizer. The winery is located near St. Hilaire where Benedictine monks produced the first sparkling wine in 1531. Keep a few bottles chilled to welcome friends and make every day special.

Pair this sparkling rosé with pink-hued foods such as shrimp, salmon and tarama spread. It is also lovely with fresh fruit desserts like red fruit pie and strawberries melba.

Vineyard Notes
These Chardonnay, Chenin and Pinot Noir grapes were grown at the sparkling wine source! The vineyard is in the wine region of Cremant de Limoux where the first sparkling wine was produced in 1531 by the Benedictine monks of the Saint Hilaire Abbey. The region’s dry Atlantic winds and gentle Mediterranean breezes are ideal for the slow, even ripening of the white wine grapes. The soil is a composite of clay, sandstone and limestone.
Production Notes
Grapes are hand-picked with selective manual harvesting from controlled low yields. Rapid transport in perforated crates prevents oxidation. A non-aggressive pneumatic press extracts clear, pure juices and ensures a healthy harvest of quality base wines.
