This carignan is deep violet with intense ruby glints and a complex bouquet of black currants, caramel, hazelnut, blueberry, coffee, blackberries, chocolate, baking spices, cedar, leather, cigar box, musk, and even more secondary and tertiary aromas. The texture is silky and fine and the palate delivers what the nose promises followed by a long and dry finish.

To be enjoyed with hearty dishes: steaks, stews, lamb, and wild game.  Try with aged cheeses such as Cantal or Comte with dried fruits and quince paste.

Vineyard Notes
Situated in Badens, a few kilometers from Carcassonne, the vineyards of Domaine Cros sit on the poorest of poor shallow stony soils that are so stark and inhospitable in certain places that only the vine and the olive tree can scratch an existence. The love of this arid terroir, where the drought seems more extreme than elsewhere, has induced Pierre Cros to preserve several ancient parcels of Aramon (planted in 1930), Piquepoul Noir (1910), Alicante (1927) and Carignan (1910) alongside the more classic “noble” (parvenu) varieties of Syrah, Grenache and Mourvèdre. The estate covers fifty hectares of which only half is planted with vines. The other part is made up of garrigue, almond trees, olive trees, oak trees. Pierre Cros has long understood the importance of respecting the environment and understanding his terroir, that is why he refuses any organic or biodynamic certification since he has always worked this way.
Production Notes
Hand-picked grapes. It is vinified in stainless steel tanks for 4 months where it undergoes carbonic maceration, then aged 6 months in oak barrels.
Winemaker Notes
Pierre Cros is a natural and instinctive winemaker having learned winemaking from watching his family members. Pierre Cros did not study oenology but learned the essential gestures of the winemaker in the field, in the 1970s. An ex-rugby player, Pierre Cros is known as the King of Concentration – so, unsurprisingly, his wines are full-bodied and entirely superb. He is an experimental wine genius continually pushing the boundaries with a wine making savoir faire. His wines certainly live up to the Languedoc motto "where creativity meets diversity".
